Ingredients

  • 600g large prawns, peeled (heads and shells reserved)
  • 1 tsp turmeric
  • 1 tsp salt
  • 5 tbsp mustard oil
  • 2 onions, blended to a paste
  • 1 thumb ginger, paste
  • 3 garlic cloves, paste
  • 5 cardamom
  • 1 cinnamon stick
  • 5 cloves
  • 3 bay leaves
  • 1 tsp red chilli powder
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 1 can coconut milk
  • 1 tbsp sugar
  • Salt

Instructions

  1. Marinate prawns with turmeric and salt.
  2. Heat mustard oil; fry whole spices.
  3. Add onion paste; cook 8 min.
  4. Add ginger-garlic; cook 2 min.
  5. Add chilli, turmeric and salt.
  6. Add coconut milk and sugar; simmer 10 min.
  7. Add prawns; cook 5 min until just cooked.
  8. Finish with garam masala.
