Ingredients

  • 3 eggs
  • 450ml warm chicken stock (or water with 1 tsp stock powder)
  • 1 tsp salt
  • 1 tsp light soy sauce
  • 1 tsp sesame oil
  • 1 spring onion, sliced
  • Coriander

Instructions

  1. Beat eggs gently — don't aerate.
  2. Mix with warm stock and salt.
  3. Strain through a fine sieve for the silkiest texture.
  4. Pour into 2 small bowls.
  5. Cover with cling film or foil.
  6. Steam over gentle heat for 10-12 minutes until just set with a slight wobble.
  7. Drizzle with soy and sesame oil; top with spring onion and coriander.
