Mexican Chilaquiles

Crispy fried tortilla pieces simmered in red or green salsa, topped with crema, cheese, onion and eggs — Mexico's most-loved breakfast.

Ingredients

  • 8 corn tortillas, cut in triangles
  • Oil for frying
  • For salsa: 6 tomatillos (or 4 tomatoes), 2 jalapeños, 1 onion, 4 garlic, big handful coriander, 1 tsp cumin, 1 cup stock — blended
  • 100g queso fresco or feta, crumbled
  • 3 tbsp Mexican crema or sour cream
  • 2 eggs, fried
  • Sliced onion, coriander, lime

Instructions

  1. Fry tortilla pieces in 1cm oil until crispy.
  2. Drain.
  3. Char salsa ingredients briefly; blend with stock; simmer 5 min.
  4. Toss tortilla pieces in the warm salsa.
  5. Plate; top with crema, cheese, fried egg, onion and coriander.
  6. Squeeze lime.

  • Toss tortillas just before serving — they soften.
  • Verde (green) or rojo (red) — both classic.
