Recipes throw around three words that sound similar but describe different processes: browning, searing, caramelising. People use them interchangeably and mostly get away with it, but if you actually understand what each does and when to use it, your cooking improves noticeably. They build flavour in different ways, and they require different techniques.

Browning is the Maillard reaction

When you brown meat, vegetables, or anything containing protein and a little moisture, you are triggering the Maillard reaction. This is the chemistry that takes place between amino acids and sugars at temperatures above about 140 degrees. It produces hundreds of new flavour compounds — deep, savoury, complex ones. The brown crust on a piece of roasted chicken or the dark fond at the bottom of a pan are both Maillard products.

Browning happens dry. If there is too much water in the pan, the temperature stays at 100 degrees (the boiling point of water) and the food steams instead of browns. This is why patting meat dry, not overcrowding the pan, and not stirring too early all help.

Searing is browning with a specific purpose

Searing is what we call browning when we do it deliberately to develop a crust on a piece of meat. The temperature has to be high — really high — to brown the outside before the inside has time to cook. A heavy pan, dripping fat, a smoking-hot surface, and meat at room temperature: these are what make a proper sear.

The myth that searing "seals in the juices" has been debunked. Searing does not seal anything. What it does is give you that delicious crusted exterior that contrasts with the tender interior.

Caramelising is about sugar

Caramelising is what happens when sugar — pure sugar — gets hot enough to break down. It happens around 170 degrees for white sugar. The result is the rich amber colour and intense flavour you get in a crème brûlée top or a caramel sauce.

"Caramelised onions" is a slight misnomer. Onions contain sugar, yes, but the deep brown colour comes from a combination of true caramelisation and Maillard. Real caramelised onions take a long time on low-medium heat because you have to evaporate the water first, then let the sugars actually caramelise. Rushing it gets you onion bits that are burnt outside and raw inside.

Why this matters

When a recipe says "brown the meat," they mean dry pan, high heat, no crowding. When it says "caramelise the onions," they mean low and slow until the natural sugars develop and the colour deepens — at least 30 minutes for a proper job. When it says "sear the steak," they mean very high heat, dry meat, and patience to let the crust form.

The right pan matters

For browning and searing, heavy stainless steel or cast iron retains heat beautifully and produces a proper crust. Non-stick pans do not get hot enough for the Maillard reaction to truly take off — they are great for eggs but limit you here.

Use the fond

The brown bits stuck to the pan after browning or searing are called fond. They are the source of huge flavour. Deglazing the pan with wine, stock or even water dissolves them into the next stage of your dish. This is the secret of a deep gravy or pan sauce.

One quick mental shortcut

Browning is general; searing is browning meat specifically; caramelising is what happens to sugar (and to some extent, the sugars in vegetables). Three different processes, all contributing to one goal: depth of flavour.
