Mote con Huesillos

A summer Chilean drink of cooked wheat berries and dried peaches in a sweet cinnamon syrup — refreshing and unusual.

Ingredients

  • 1 cup husked wheat berries (mote), soaked overnight
  • 8 dried peaches (huesillos), soaked overnight
  • 200g sugar
  • 1 cinnamon stick
  • 2 cloves
  • 1 strip lemon peel
  • 1.5 litres water

Instructions

  1. Simmer the soaked peaches with sugar, cinnamon, cloves and lemon peel in 1.5 litres water for 40 minutes until soft.
  2. Cool the syrup.
  3. Separately, simmer the wheat berries in fresh water until soft, about 45 minutes; drain.
  4. To serve, place wheat berries at the bottom of a glass, top with two peach halves and ladle over chilled syrup.
  5. Eat with a spoon.
