Chilean Mote con Huesillo

Ingredients

  • 200g dried peaches
  • 1 litre water
  • 200g sugar
  • 1 cinnamon stick
  • 3 cloves
  • 100g cooked wheat berries (mote)
  • Lemon peel

Instructions

  1. Soak peaches overnight.
  2. Simmer them in fresh water with sugar, cinnamon, cloves and lemon peel for 90 minutes.
  3. Cool and chill.
  4. Cook wheat berries in salted water 45 minutes; chill.
  5. Serve in tall glasses with wheat at the bottom, a peach, and cold syrup.
