Lebanese Fattoush

A bright Lebanese salad of cucumber, tomato, radish, herbs and crispy pita with a sumac-lemon dressing.

Ingredients

  • 2 pita breads, torn into pieces
  • 3 tbsp olive oil + extra for dressing
  • 3 tomatoes, chunked
  • 1 cucumber, diced
  • 4 radishes, sliced
  • 1/2 red onion, sliced
  • Big bunch parsley, chopped
  • Handful mint
  • Cos lettuce, chopped
  • For dressing: juice of 2 lemons, 2 tbsp olive oil, 1 garlic clove, 1 tbsp pomegranate molasses, 2 tsp sumac, salt

Instructions

  1. Toss pita pieces with 3 tbsp oil, salt and 1 tsp sumac; bake at 200C for 8 minutes until crisp.
  2. Whisk the dressing.
  3. Combine all the chopped vegetables and herbs.
  4. Toss with dressing.
  5. Top with the crispy pita at the last moment.

  • Sumac and pomegranate molasses give fattoush its signature tang.
  • Add pita just before serving — it goes soggy fast.
