Chilean Seafood Empanadas

Ingredients

  • 1 pack empanada discs
  • 300g prawns, chopped
  • 150g mussel meat
  • 1 onion
  • 2 garlic cloves
  • 2 tbsp butter
  • 2 tbsp flour
  • 150ml cream
  • 1/2 tsp paprika
  • Parsley
  • Oil for frying

Instructions

  1. Soften onion and garlic in butter.
  2. Stir in flour 1 minute, then whisk in cream until thick.
  3. Add seafood and paprika; cook 2 minutes.
  4. Stir in parsley; cool completely.
  5. Fill discs and seal well.
  6. Fry in 180C oil 3-4 minutes until golden.
