Zucchini Fritters

Ingredients

  • 3 courgettes, grated
  • 1 tsp salt
  • 100g feta, crumbled
  • 2 spring onions
  • Handful dill
  • 100g flour
  • 2 eggs
  • Oil for frying
  • Lemon wedges

Instructions

  1. Salt the grated courgette; rest 15 minutes; squeeze out water firmly.
  2. Mix with feta, spring onion, dill, flour, eggs and pepper.
  3. Heat a little oil in a pan.
  4. Drop in spoonfuls; flatten.
  5. Cook 3 minutes a side until golden.
  6. Serve with lemon.
