British Welsh Rarebit

Ingredients

  • 200g mature cheddar, grated
  • 3 tbsp ale or beer
  • 2 tbsp butter
  • 1 tbsp flour
  • 1 tsp English mustard
  • 1 tsp Worcestershire
  • 1 egg yolk
  • 4 slices thick bread
  • Salt and pepper

Instructions

  1. Melt butter, stir in flour 1 minute.
  2. Whisk in ale until smooth.
  3. Stir in cheese off the heat until melted.
  4. Beat in mustard, Worcestershire, yolk, salt and pepper.
  5. Toast the bread on one side under the grill.
  6. Spread the cheese mixture thickly on the untoasted side.
  7. Grill until bubbling and golden.

  • Don't boil after adding the yolk.
  • Mature cheddar gives the best flavour.

Serving suggestions

  • Lovely with a pickled onion on the side.
