Vietnamese Beef Banh Mi

Ingredients

  • 300g beef sirloin, thinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 garlic clove, minced
  • 2 baguette rolls
  • For the pickle: 1 carrot, 1/2 daikon or extra carrot, julienned, 3 tbsp rice vinegar, 1 tbsp sugar, pinch of salt
  • To assemble: cucumber, fresh coriander, sliced chilli, mayonnaise, soy or maggi sauce

Instructions

  1. Mix the pickle vegetables with vinegar, sugar and salt; rest 15 minutes.
  2. Marinate the beef with soy sauce, sugar and garlic for 10 minutes.
  3. Sear the beef in a hot pan for 2-3 minutes until just cooked.
  4. Split the baguettes, spread with mayo, and fill with beef, pickles, cucumber, herbs and chilli.
  5. Drizzle with a little soy sauce just before closing.
