Vietnamese Banh Mi Pâté

Ingredients

  • 2 small baguettes, crisp-crusted
  • 100g pâté or chicken liver pâté
  • 200g cooked pork (sliced char siu, ham or roast)
  • Pickled carrot and daikon (julienned, soaked in vinegar with sugar)
  • Cucumber matchsticks
  • Big handful coriander
  • 2 fresh red chillies, sliced
  • Mayonnaise
  • Maggi seasoning or soy sauce

Instructions

  1. Split the baguettes lengthways without going all the way through.
  2. Spread pâté on one side, mayo on the other.
  3. Layer pork, pickles, cucumber, chillies and coriander.
  4. Drizzle with Maggi seasoning.
  5. Press together and eat immediately.
