Ingredients

  • 4 eggs
  • 1 small onion
  • 1 small tomato
  • 1/2 green pepper
  • 2 spring onions
  • 3 tbsp oil or butter
  • Salt and pepper

Instructions

  1. Cook onion, tomato and pepper in oil until softened, 5 minutes.
  2. Beat eggs with salt.
  3. Pour in and stir gently until just set.
  4. Finish with spring onion.
