Ingredients

  • 4 potatoes, boiled and mashed
  • 2 green chillies
  • 1 tsp ginger-garlic paste
  • 1 tsp mustard seeds
  • 10 curry leaves
  • 1/2 tsp turmeric
  • Salt
  • Coriander
  • For batter: 1 cup gram flour, 1/2 tsp turmeric, pinch chilli, salt, water
  • Oil for frying
  • Soft buns and green chutney

Instructions

  1. Temper mustard seeds and curry leaves, add ginger-garlic and chilli.
  2. Mix with the mashed potato, turmeric, coriander and salt.
  3. Shape into balls.
  4. Whisk the gram flour with water to a thick batter.
  5. Dip the balls in batter and fry in hot oil until golden.
  6. Slit the buns, smear with chutney, and stuff with a hot vada.

  • Fry hot so the coating crisps before the inside softens.
  • A pinch of bicarbonate in the batter makes it lighter.

Serving suggestions

  • Add a fried green chilli on the side for the full experience.
