Ingredients

  • 1 cup coarse semolina (rava)
  • 3 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp urad dal
  • 1 tsp chana dal
  • 10 curry leaves
  • 1 onion, chopped
  • 1 green chilli
  • 1 thumb ginger, grated
  • 1/2 cup peas and chopped carrot
  • 2.5 cups water
  • Salt
  • Lemon juice
  • Coriander
  • Cashews (optional)

Instructions

  1. Dry-roast the semolina in a pan until lightly golden and aromatic; set aside.
  2. In a separate pan, heat oil and pop the mustard seeds, dals and curry leaves.
  3. Add the onion, chilli, ginger and vegetables; cook 5 minutes.
  4. Pour in the water and salt; bring to a boil.
  5. Slowly add the semolina in a stream, stirring constantly to avoid lumps.
  6. Cover and cook on low for 3 minutes.
  7. Finish with lemon juice and coriander.

  • Add it slowly to the boiling water while stirring.
