Turkish Sigara Boregi

Crispy filo cigars filled with feta, parsley and herbs — a Turkish meze favourite.

Ingredients

  • 1 packet filo pastry
  • 300g feta, crumbled
  • Handful parsley, chopped
  • 1 egg, beaten
  • Oil for frying

Instructions

  1. Mix the feta with the parsley and a little beaten egg.
  2. Cut the filo into long strips.
  3. Place filling on one end and roll into a cigar, brushing edges with egg.
  4. Fry in medium-hot oil for 2 minutes a side until golden and crisp.
  5. Drain on paper.
