Turkish Menemen

Ingredients

  • 3 tbsp olive oil
  • 2 green peppers, chopped
  • 3 tomatoes, grated or chopped
  • 4 eggs, lightly beaten
  • 1/2 tsp paprika
  • Salt and pepper
  • Fresh parsley to serve

Instructions

  1. Warm the oil in a pan and cook the peppers until soft, about 6 minutes.
  2. Add the tomatoes and paprika and simmer until saucy, 4-5 minutes.
  3. Season, pour in the eggs and stir gently so they cook in soft folds.
  4. Take off the heat while still creamy and scatter with parsley.

  • Do not over-stir — large soft curds are what you want.
  • Grating the tomatoes gives a smoother, juicier base.
