Turkish Borek

Ingredients

  • 1 packet filo pastry
  • 200g feta, crumbled
  • 200g spinach, wilted and squeezed
  • Handful chopped parsley
  • 1 egg, beaten
  • 100ml milk
  • 100ml olive oil
  • Sesame and nigella seeds

Instructions

  1. Heat the oven to 180C.
  2. Mix the feta, spinach, parsley and a little of the beaten egg.
  3. Whisk the rest of the egg with the milk and olive oil.
  4. Layer half the filo sheets in a baking tin, brushing each with the egg-milk mix.
  5. Spread the filling, then layer the rest of the filo on top, brushing each sheet.
  6. Score the top into squares, brush with egg-milk, and scatter with seeds.
  7. Bake for 35 minutes until golden and crisp.

  • Keep the filo covered with a damp towel as you work so it does not dry out.
  • Brush every layer — that is what creates the lacy flakes.

  • Serve warm with a glass of strong tea.
