Tomato Soup

Ingredients

  • 2 cans chopped tomatoes
  • 1 onion, chopped
  • 2 garlic cloves
  • 1 carrot, diced
  • 2 tbsp tomato paste
  • 500ml stock
  • 1 tsp sugar
  • Handful basil
  • 3 tbsp olive oil
  • Salt and pepper

Instructions

  1. Soften the onion, carrot and garlic in the oil.
  2. Stir in the tomato paste, then the tomatoes, stock and sugar.
  3. Simmer for 15 minutes.
  4. Add the basil and blend smooth.
  5. Season to taste.
