Stuffed Mushrooms

Mushroom caps filled with garlicky herb breadcrumbs and cheese, baked until golden — a moreish bite.

Ingredients

  • 12 large mushrooms
  • 3 garlic cloves, minced
  • 1 cup breadcrumbs
  • 50g grated cheese
  • Handful parsley
  • 3 tbsp olive oil
  • Salt and pepper

Instructions

  1. Remove and chop the mushroom stalks.
  2. Mix the chopped stalks, garlic, breadcrumbs, cheese, parsley, oil and seasoning.
  3. Fill the mushroom caps with the mixture.
  4. Bake at 190C for 18-20 minutes until golden.

  • Don't wash the mushrooms — wipe them so they don't go soggy.
  • A little extra cheese on top makes them golden.

Serving suggestions

  • Serve hot as a starter or canapé.
