Ingredients

  • 2 cups freshly grated coconut (or rehydrated desiccated)
  • 3 shallots, finely chopped
  • 2 tbsp red chilli powder (or to taste)
  • 1 tsp paprika (for colour)
  • Juice of 2 limes
  • 1/2 tsp salt
  • 1 tsp Maldive fish flakes (optional)

Instructions

  1. Mix all ingredients in a bowl.
  2. Squeeze and mix with your hands until the coconut takes on the chilli colour.
  3. Rest 10 minutes.
  4. Adjust lime and salt.
