Spinach and Feta Pinwheels

Flaky puff pastry spirals filled with spinach, feta and dill — perfect party food in twenty-five minutes.

Ingredients

  • 1 sheet ready-rolled puff pastry
  • 200g frozen spinach, thawed and squeezed dry
  • 150g feta, crumbled
  • 1 garlic clove, minced
  • 1 tsp dried dill
  • Salt and pepper
  • 1 egg, beaten

Instructions

  1. Heat the oven to 200C.
  2. Mix the spinach, feta, garlic, dill and seasoning.
  3. Spread evenly over the pastry sheet, leaving a small border.
  4. Roll up tightly from the long edge.
  5. Slice into 1.5cm rounds.
  6. Place on a lined tray, brush with egg.
  7. Bake 18-20 minutes until golden and crisp.

  • Squeeze the spinach really dry or the pastry goes soggy.
  • Chill the roll for 10 minutes before slicing for cleaner cuts.
