Spanish Tortilla Bites

Ingredients

  • 4 potatoes, thinly sliced
  • 1 onion, thinly sliced
  • 6 eggs
  • 150ml olive oil
  • Salt

Instructions

  1. Cook the potato and onion gently in olive oil until soft, about 20 minutes; drain.
  2. Beat the eggs with salt; stir in the potato.
  3. Heat a little oil in a small pan, pour in the mix, and cook on low.
  4. Flip using a plate and cook the other side until just set.
  5. Cool completely, then cut into small wedges.
  6. Spear each with a cocktail stick.
