Spanish Garlic Soup

A simple peasant soup of garlic, paprika, bread and a poached egg — humble, warming and packed with flavour.

Ingredients

  • 8 garlic cloves, sliced
  • 4 slices stale bread, cubed
  • 1 tbsp smoked paprika
  • 1.2 litres stock
  • 4 eggs
  • 4 tbsp olive oil
  • Salt and pepper
  • Parsley

Instructions

  1. Fry the garlic in the oil over low heat until just golden — do not burn.
  2. Add the bread cubes and toast until crisp.
  3. Off the heat, stir in the paprika.
  4. Add the stock, simmer 10 minutes.
  5. Crack each egg into the simmering soup and poach 3 minutes.
  6. Season and serve with parsley.
