Thai Som Tam (Green Papaya Salad)

Ingredients

  • 1 small green papaya, peeled and shredded
  • 2 garlic cloves
  • 3 Thai bird chillies (or fewer)
  • 2 tbsp dried shrimp
  • 2 tbsp roasted peanuts
  • 5 cherry tomatoes, halved
  • Handful green beans, chopped
  • For dressing: juice of 2 limes, 2 tbsp fish sauce, 2 tbsp palm sugar, 1 tbsp tamarind paste

Instructions

  1. In a large mortar, pound the garlic and chillies into a paste.
  2. Add the dried shrimp and peanuts; pound briefly.
  3. Add the green beans and bruise lightly.
  4. Mix the dressing and add to the mortar.
  5. Pile in the papaya and tomatoes; pound and toss together gently for a minute.
  6. Taste and balance — should be sour, salty, sweet and spicy.
