Ingredients

  • 500g pork belly, boiled then chopped small
  • 1 onion
  • 3 garlic cloves
  • 3 red chillies
  • 3 tbsp soy sauce
  • 3 tbsp lime juice
  • 1 tbsp mayonnaise
  • 2 tbsp oil
  • 1 egg per person
  • Spring onion

Instructions

  1. Fry chopped pork in oil over high heat until crisp at edges.
  2. Add garlic, onion and chilli; cook 3 minutes.
  3. Stir in soy, lime and mayo.
  4. Transfer to a hot pan or sizzling plate.
  5. Crack an egg over the top.
  6. Top with spring onion.
