Scallion Pancakes (Cong You Bing)

Ingredients

  • 300g plain flour
  • 150ml boiling water
  • 50ml cold water
  • 5 spring onions, finely chopped
  • 4 tbsp toasted sesame oil
  • 1 tsp salt
  • Oil for frying

Instructions

  1. Pour the boiling water over the flour and mix, then add cold water and knead into a smooth dough.
  2. Rest 30 minutes.
  3. Divide into 4. Roll each thin, brush with sesame oil, sprinkle with salt and spring onion.
  4. Roll up tightly into a rope, then coil into a spiral.
  5. Flatten and roll out gently to a pancake.
  6. Fry in oil for 3-4 minutes a side until golden and crisp.
