Russian Blini

Ingredients

  • 250g plain flour
  • 7g yeast
  • 1 tsp sugar
  • 500ml warm milk
  • 3 eggs, separated
  • 50g butter, melted
  • Pinch of salt
  • Butter for cooking
  • Toppings: smoked salmon, soured cream, dill, lemon

Instructions

  1. Whisk flour, yeast, sugar and milk; rest 30 minutes.
  2. Beat in egg yolks, butter and salt.
  3. Rest another 30 minutes.
  4. Whip egg whites stiff; fold in.
  5. Heat a buttered non-stick pan; cook small pancakes 1 minute a side.
  6. Serve warm with toppings.
