Roasted Tomato Sauce

Ingredients

  • 1.5kg ripe tomatoes, halved
  • 8 garlic cloves, whole
  • 1 onion, quartered
  • 5 tbsp olive oil
  • 1 tsp oregano
  • 1 tsp sugar
  • Salt, pepper
  • Fresh basil

Instructions

  1. Spread the tomatoes, garlic and onion on a tray.
  2. Drizzle with oil, sprinkle with oregano, sugar, salt and pepper.
  3. Roast at 200C for 45-50 minutes until charred at the edges.
  4. Squeeze the garlic out of the skins and blend everything (or mash for a chunkier sauce).
  5. Tear in fresh basil.
