Ingredients

  • 2 cups thick poha (flattened rice)
  • 3 tbsp oil
  • 1 tsp mustard seeds
  • 1 onion, chopped
  • 1 green chilli
  • 10 curry leaves
  • 1/2 tsp turmeric
  • 1 potato, cubed small
  • 1/4 cup peanuts
  • Salt
  • 1 tsp sugar
  • Lemon juice
  • Coriander

Instructions

  1. Rinse the poha quickly in a sieve under cold water; drain and rest 5 minutes — it should fluff up.
  2. Heat oil and fry the peanuts until golden; set aside.
  3. Pop the mustard seeds, add onion, chilli, curry leaves.
  4. Add the potato and cook covered until tender, about 8 minutes.
  5. Stir in the turmeric, salt and sugar.
  6. Fold in the poha gently with the peanuts and a splash of water if dry.
  7. Cook 2 minutes covered.
  8. Finish with lemon and coriander.

Tara’s tips

  • Don't over-rinse the poha — it goes mushy.
  • Use thick poha (not thin) for the best texture.

Serving suggestions

  • Lovely with a cup of masala chai.
