Onion Bhaji

Ingredients

  • 3 onions, thinly sliced
  • 1 cup gram (chickpea) flour
  • 1 tsp cumin
  • 1 tsp coriander powder
  • 1/2 tsp turmeric
  • 1/2 tsp chilli powder
  • 1 green chilli, chopped
  • Handful coriander
  • Salt
  • Water
  • Oil for frying

Instructions

  1. Mix the onions with the spices, chilli, coriander and salt; let them sit 5 minutes to release moisture.
  2. Add the gram flour and just enough water to bind into a thick batter.
  3. Heat oil to medium-high.
  4. Drop in spoonfuls and fry until deep golden and crisp.
  5. Drain on paper.

  • Let the salted onions sit so they release water — you need less added liquid.
  • Don't make the batter too wet or the bhajis turn greasy.

Serving suggestions

  • Serve with mint chutney.
