Ingredients

  • 3 very ripe plantains, mashed
  • 1 cup flour
  • 1/4 cup sugar
  • 1 tsp yeast
  • 1/2 tsp nutmeg
  • Pinch of salt
  • 100ml warm water
  • Oil for frying

Instructions

  1. Mix all the ingredients into a thick batter; rest 30 minutes until bubbly.
  2. Heat oil to medium.
  3. Drop in spoonfuls and fry until deep golden, turning once.
  4. Drain on paper.
