Moroccan Harira Soup

A hearty tomato, lentil and chickpea soup with warm spices — traditionally served to break the Ramadan fast.

Ingredients

  • 1 cup lentils
  • 1 can chickpeas
  • 1 onion, chopped
  • 3 celery stalks, diced
  • 2 tomatoes, chopped
  • 2 tbsp tomato paste
  • 1 tsp cumin
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 1.5 litres stock
  • Handful coriander and parsley
  • 3 tbsp oil
  • Juice of 1 lemon

Instructions

  1. Soften the onion and celery in oil.
  2. Add the spices and tomato paste, then the tomatoes.
  3. Stir in the lentils, chickpeas and stock; simmer 35 minutes.
  4. Add the herbs and lemon juice.
  5. Season and serve.

  • A handful of broken vermicelli added near the end is traditional.
  • Plenty of fresh herbs and lemon lift the soup.

Serving suggestions

  • Serve with dates and bread, as is traditional for iftar.

Storage & reheating

Keeps 4 days; thickens, loosen with stock.
