Mexican Elote

Ingredients

  • 4 ears corn
  • 4 tbsp mayonnaise
  • 100g cotija or feta, crumbled
  • 1 tsp chilli powder
  • 1 tsp smoked paprika
  • Juice of 2 limes
  • Coriander
  • Wooden sticks

Instructions

  1. Grill or roast the corn until charred all over, about 10 minutes.
  2. Push a stick into each ear (for handles).
  3. Brush each cob with mayo.
  4. Roll in cotija and dust with chilli and paprika.
  5. Squeeze lime and scatter with coriander.
