Masala Chai

Ingredients

  • 2 cups water
  • 2 cups milk
  • 3 tsp loose black tea (or 3 tea bags)
  • 1 thumb ginger, sliced
  • 4 cardamom pods, crushed
  • 1 cinnamon stick
  • 3 cloves
  • Sugar to taste

Instructions

  1. Bring the water to a simmer with all the spices and the ginger; cook for 3-4 minutes.
  2. Add the tea and simmer for 2 minutes more.
  3. Pour in the milk and bring back to a boil.
  4. Lower the heat and simmer for 3 minutes for a deeper colour.
  5. Strain and serve with sugar to taste.

  • Crush the cardamom and bruise the ginger to release more flavour.
  • A second simmer after the milk is added gives the signature creamy depth.

  • Wonderful with biscuits or a slice of toast.
