Mango Sticky Rice

Ingredients

  • 1 cup glutinous (sticky) rice, soaked 4 hours
  • 1 can coconut milk
  • 3 tbsp sugar
  • 1/2 tsp salt
  • 2 ripe mangoes, sliced
  • Toasted sesame seeds

Instructions

  1. Steam the soaked rice for 20 minutes until tender.
  2. Warm the coconut milk with the sugar and salt (reserve a little for drizzling).
  3. Pour most of the coconut mixture over the hot rice and let it absorb for 20 minutes.
  4. Serve the rice with sliced mango, the reserved coconut drizzle and sesame seeds.
