Ingredients

  • 4 tomatoes, diced
  • 1 red onion, finely sliced
  • 1 chilli, chopped
  • Handful coriander
  • Juice of 1 lemon
  • 1 tbsp oil
  • Salt

Instructions

  1. Salt the sliced onion lightly and rinse — this takes the harsh bite away.
  2. Combine with the tomato, chilli, coriander, lemon and oil.
  3. Rest 10 minutes before serving.
