Ingredients

  • 1 cup plain flour
  • 2 tbsp gram flour
  • 1/2 tsp baking powder
  • 1 cup yoghurt
  • Pinch of saffron
  • For syrup: 300g sugar, 200ml water, 4 cardamom pods, 1 tsp lemon juice, pinch saffron
  • Oil for frying

Instructions

  1. Mix the flours, baking powder, yoghurt and saffron into a thick, smooth batter; rest 15 minutes.
  2. Simmer the syrup ingredients until slightly thickened.
  3. Pour the batter into a piping bag or squeeze bottle.
  4. Heat oil; pipe spirals straight into the oil and fry until crisp and pale gold.
  5. Drain briefly, then dip hot into the warm syrup for 30 seconds.

  • Medium-hot oil is essential — too hot burns, too cold soaks.
  • The lemon juice in the syrup stops it crystallising.
