Indian Paneer Tikka

Cubes of paneer cheese and peppers marinated in spiced yoghurt and grilled until charred — a vegetarian Indian favourite.

Ingredients

  • 500g paneer, cubed
  • 1 green pepper, chunked
  • 1 red pepper, chunked
  • 1 onion, chunked
  • For marinade: 1 cup thick yoghurt, 1 tbsp ginger-garlic paste, 1 tsp turmeric, 1 tsp chilli powder, 1 tsp garam masala, 1 tsp cumin, 1 tbsp lemon juice, 1 tbsp gram flour, 3 tbsp oil, salt
  • Wooden skewers, soaked
  • Mint chutney, lemon to serve

Instructions

  1. Toast the gram flour briefly in a dry pan; cool.
  2. Whisk all the marinade ingredients together.
  3. Add the paneer, peppers and onion; coat well.
  4. Marinate at least 30 minutes.
  5. Thread onto skewers alternating cheese and vegetables.
  6. Grill, barbecue or oven-roast at 220C for 12-15 minutes, turning, until charred.

Tara’s tips

  • Don't over-marinate paneer (max 2 hours) or it gets soft.
  • Use thick yoghurt — strain regular yoghurt if needed.

Serving suggestions

  • Squeeze of lemon and mint chutney is essential.
