Iced Lemon Mint Cooler

A bright, fizzy lemon and mint drink — the most refreshing thing you can make in five minutes.

Ingredients

  • Juice of 4 lemons
  • Big handful fresh mint leaves
  • 3-4 tbsp sugar or honey
  • 750ml cold sparkling water
  • Plenty of ice
  • Lemon slices and extra mint to serve

Instructions

  1. In a large jug, muddle the mint with the sugar to bruise it.
  2. Add the lemon juice and stir until the sugar has dissolved.
  3. Top up with sparkling water and plenty of ice.
  4. Garnish with lemon slices and a few fresh mint sprigs.

  • Muddling the mint with the sugar releases the oils far better than just dropping it in.
  • Adjust the sugar to taste — it depends on how tart the lemons are.
