Ingredients

  • 1 cup long-grain white rice
  • 1/4 cup almonds (optional)
  • 1 cinnamon stick
  • 4 cups water
  • 1 cup milk (or plant milk)
  • 1/2 cup sugar
  • 1 tsp vanilla
  • Ground cinnamon to serve
  • Ice

Instructions

  1. Soak the rice, almonds and cinnamon stick in the water 4 hours or overnight.
  2. Blend everything until smooth.
  3. Strain through a fine sieve or muslin twice.
  4. Stir in the milk, sugar and vanilla.
  5. Serve over ice with cinnamon on top.
