Filipino Halo-Halo

A colourful Filipino ice dessert with shaved ice, sweet beans, fruit, jellies and a scoop of purple yam ice cream.

Ingredients

  • 2 cups shaved or crushed ice
  • 3 tbsp sweet red beans (canned)
  • 3 tbsp sweet white beans
  • 3 tbsp jackfruit, sliced
  • 2 tbsp coconut strips (macapuno)
  • 3 tbsp tapioca pearls
  • 2 tbsp sweet plantain, cubed
  • 100ml condensed milk
  • 2 scoops ube (purple yam) ice cream
  • 3 tbsp pinipig (toasted rice) or cornflakes

Instructions

  1. In a tall glass, layer beans, jackfruit, coconut, plantain and tapioca at the bottom.
  2. Pile shaved ice on top.
  3. Pour over condensed milk.
  4. Top with ube ice cream and pinipig.
  5. Eat with a long spoon, mixing as you go — 'halo-halo' means 'mix-mix'.
