Halloumi Wrap

Ingredients

  • 200g halloumi, sliced
  • 2 large flatbreads
  • Handful salad leaves
  • 1 tomato, sliced
  • 1/4 cucumber, sliced
  • For dressing: 3 tbsp yoghurt, 1 tbsp chopped mint, 1 garlic clove, squeeze of lemon

Instructions

  1. Griddle the halloumi for 2 minutes a side until golden.
  2. Mix the dressing ingredients.
  3. Warm the flatbreads.
  4. Fill with salad, tomato, cucumber and halloumi.
  5. Drizzle with the dressing and roll up.
