Ingredients

  • 4 tomatoes, in wedges
  • 1 cucumber, chunked
  • 1/2 red onion, sliced
  • 100g Kalamata olives
  • 200g feta, in slabs
  • 1 tsp dried oregano
  • 4 tbsp olive oil
  • 1 tbsp red wine vinegar
  • Salt

Instructions

  1. Combine the tomato, cucumber, onion and olives in a bowl.
  2. Dress with oil, vinegar, oregano and salt.
  3. Lay the feta on top in slabs.
  4. Sprinkle with more oregano and a drizzle of oil.
