Greek Lemon Rice

Ingredients

  • 1.5 cups long-grain rice
  • 1 onion, chopped
  • 2 garlic cloves
  • Zest and juice of 1 lemon
  • 3 cups stock
  • 3 tbsp olive oil
  • Handful dill or parsley
  • Salt and pepper

Instructions

  1. Soften the onion and garlic in the oil.
  2. Add the rice and toast for a minute.
  3. Pour in the stock and lemon zest; cover and cook 18 minutes.
  4. Stir through the lemon juice and herbs.
  5. Fluff and season.
