Gajar Halwa (Carrot Pudding)

Ingredients

  • 1kg carrots, grated
  • 1 litre full-fat milk
  • 150g sugar
  • 3 tbsp ghee
  • 4 cardamom pods, crushed
  • Handful chopped pistachios and almonds
  • A few strands of saffron (optional)

Instructions

  1. Heat the ghee and add the grated carrot; cook for 5 minutes to soften.
  2. Pour in the milk and bring to a simmer.
  3. Cook on medium heat, stirring often, until the milk has reduced and been absorbed — about 40 minutes.
  4. Add the sugar and cook another 10 minutes until thick and glossy.
  5. Stir in the cardamom and saffron, top with nuts, and serve warm.
