French Madeleines

Ingredients

  • 2 eggs
  • 100g caster sugar
  • 120g flour
  • 1 tsp baking powder
  • 120g butter, melted and cooled
  • Zest of 1 lemon
  • 1 tsp vanilla

Instructions

  1. Whisk eggs and sugar until pale and tripled in volume.
  2. Fold in flour and baking powder.
  3. Drizzle in melted butter, lemon zest and vanilla.
  4. Chill batter 1 hour (essential for the hump).
  5. Fill greased madeleine moulds 3/4 full.
  6. Bake at 200C for 8-10 minutes until golden with a domed centre.
  7. Eat warm.
