French Croque Monsieur

Ingredients

  • 4 thick slices bread
  • 4 slices good ham
  • 150g grated Gruyère
  • For béchamel: 30g butter, 30g flour, 300ml warm milk, pinch of nutmeg, salt
  • Dijon mustard

Instructions

  1. Make béchamel: melt butter, stir in flour, gradually whisk in milk until thick; season.
  2. Spread bread with mustard.
  3. Layer ham and a little cheese on two slices; close.
  4. Spread top with thick béchamel and remaining cheese.
  5. Place under grill until bubbling and deep golden.
