Fluffy American Pancakes

Ingredients

  • 200g plain flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • Pinch of salt
  • 250ml milk
  • 1 egg
  • 2 tbsp melted butter
  • Butter or oil for the pan

Instructions

  1. Whisk the flour, sugar, baking powder and salt in a bowl.
  2. In a jug, beat the milk, egg and melted butter.
  3. Pour the wet into the dry and stir until just combined β€” a few lumps are fine.
  4. Heat a little butter in a non-stick pan over medium heat.
  5. Drop in spoonfuls of batter and cook until bubbles form on top, then flip and cook the other side until golden.

  • Do not overmix β€” lumps make fluffier pancakes.
  • Let the batter rest for 5 minutes before cooking.
