Filipino Bibingka

Ingredients

  • 2 cups rice flour
  • 1 tsp baking powder
  • 1 cup sugar
  • 3 eggs
  • 1 can coconut milk
  • 60g butter, melted
  • 100g grated cheese
  • 2 salted eggs, sliced (optional)
  • Banana leaves (or paper)
  • Desiccated coconut, sugar

Instructions

  1. Whisk rice flour, baking powder, sugar, eggs, coconut milk and butter into a smooth batter.
  2. Line small cake tins with banana leaves.
  3. Pour in batter.
  4. Top with cheese and salted egg.
  5. Bake at 180C for 25 minutes; top with coconut and sugar; bake 10 more minutes.
